Anybody can make these dates – it’s even a fun snack for kids to make! The best part about this snack is how healthy it is, yet rich and decadent. I like to use this as a treat when I have a sweets craving.

stuffed date Ingredients
- Medjool dates – Medjool dates are best for this recipe because they are soft and gooey and large ebnough to stuff. They usually come with pits, but you might be able to get your hands on some pitted medjool dates like these ones.
- Peanut butter – I use creamy, natural peanut butter for this recipe, but crunchy is fine too. Any nut butter would work great as well!
- Walnuts – If you’re using walnuts (or any nut for that matter) make sure they’re finely chopped so they are small enough to sprinkle on top of the peanut butter.
- Flakey sea salt – I use Maldon’s flake sea salt for this recipe.
INSTRUCTIONS
- Set your oven to broil (optional step – only if you want to heat the dates up to make them nice and gooey!).
- Carefully slice the date in half without slicing all the way through the date. The pit will likely stop your knife. Remove the pit if you didn’t buy pitted dates.

- Pull the date apart slightly so the gap in the center is large enough to stuff.
- Use the tip of a spoon to scoop about 1 tsp of peanut butter and stuff the date with it. Use more or less depending on the size of the date (they will vary).

- Top with chopped walnuts and a sprinkle of flakey sea salt if desired.

- Place the stuffed dates on a baking sheet and in the oven on broil for about 2 minutes. Keep a close eye because you don’t want the walnuts to burn but you do want to heat the dates through. This takes about 2-3 minutes.
