This horseradish aioli is creamy, with a nice kick of heat! Perfect for around the holidays when you’re making prime rib and roast beef, but also great year-round for things like burgers, sandwiches, and dipping french fries.

First, horseradish is a root vegetable that has a nice kick to it, similar to the heat from wasabi. Horseradish is actually from the same family as wasabi.
Aioli is traditionally made from olive oil and garlic blended together to create a creamy sauce. My horseradish aioli sauce uses avocado oil, garlic, lemon, and a couple of other ingredients to make a sauce packed with flavor!

This creamy aioli has a nice kick from the horseradish and is slightly tangy from the lemon. Perfect for tuna salad, burgers, dipping fries, french dip sandwiches, or fried brussels sprouts!

These are the ingredients you can use for a simple aioli (no added flavor). This gives you something very similar to mayonnaise, but way more delicious. Add the horseradish to make it horseradish aioli.
Eggs – you’ll be using one full egg and one egg yolk. Eggs traditionally aren’t used in aioli but I prefer the consistency they provide the sauce.
Dijon mustard – this adds such a great depth of flavor to the aioli!
Lemon juice – lemon juice gives the sauce a subtly tangy flavor.
Sea salt – use sea salt vs. table salt. Sea salt has lots of beneficial trace minerals that table salt simply doesn’t provide.
Avocado oil – I prefer to use avocado oil versus olive oil since avocado oil has a subtler flavor and olive oil tends to overpower the aioli.

Use all the base ingredients above as well as the below to make a horseradish aioli sauce.
Prepared horseradish – prepared horseradish is just the stuff you find in the jars at the grocery store rather than the root vegetable. Be sure not to buy a “creamy horseradish” since that’s a sauce that’s already been made.
Garlic cloves – you can do raw garlic or roasted!

Add your full egg then one egg yolk to the cup of an immersion blender.

Then place your whole garlic cloves in with the eggs.

Next, toss in the dijon mustard and horseradish.

Finally, pour in the lemon juice.

Using the immersion blender start blending all the ingredients while slowly adding the avocado oil simultaneously. This can be a bit difficult so just do the best you can!

Lastly, once all the oil has been added to the mixture, take the end of the immersion blender and pull it slightly out of the mixture (so you’ll have about half the blades in and half out). Move the blender up and down to add air into the sauce. This is what makes it super thick. Do this until you reach the desired consistency.

You could make this horseradish aioli even easier by replacing all the “base aioli” ingredients listed above with 1 cup of your favorite mayonnaise.
Use a fork to mix the horseradish and minced garlic into the sauce and you’ll have a simple horseradish sauce in seconds.

Store your creamy horseradish sauce in the refrigerator for up to 1 week.

- Add air – The last step is the most important. Adding air into the mixture is what will turn your sauce from thin to thick and creamy.
- Roast the garlic – Roasting the garlic will add a little sweetness to the aioli, whereas using raw garlic adds a little spice (which works great with the horseradish), the choice is yours!
- Let it marinate – Letting the aioli marinate in the refrigerator for a while helps to develop the flavors. If time allows, let it marinate for a while before using.

Horseradish aioli uses a base of eggs, avocado oil, lemon juice, sea salt, and dijon mustard blended with prepared horseradish and a couple cloves of garlic to give it it’s flavor.
Traditionally, aioli sauce is made from olive oil mashed and emulsified into garlic. However, there are many more iterations of aioli now which resemble something closer to mayonnaise using egg, and avocado oil.
No, aioli is it’s own thing made differently than mayo. However, the two have become conflated as the traditional way of making aioli has become a thing of the past.

Horseradish Aioli
Equipment
- 1 immersion blender or regular blender
Ingredients
Base Aioli Ingredients
- 1 whole egg
- 1 egg yolk
- 1 tbs dijon mustard
- 1 tbs juice from lemon
- 1/2 tsp sea salt
- 3/4 cup avocado oil
Horseradish Aioli Ingredients
- 3 tsp prepared horseradish prepared horseradish is just the horseradish you get in the jar rather than the horseradish root.
- 2 garlic cloves raw or roasted
Instructions
- Place all the ingredients (except oil) into a blender (or cup of an immersion blender).
- Start to blend your horseradish aioli while slowly drizzling the oil in at the same time.
- Once all the oil is added, if using immersion blender, lift the blender up just over the top of the aioli to let some air into it then back down to blend. This makes it thick and creamy!
