Tomato mascarpone sauce is a pasta sauce with a tomato base, using the soft, Italian cheese mascarpone to make it creamy and extra delicious.
Adding mascarpone to your pasta sauce is a great way to turn a bland sauce into a more sophisticated, creamy sauce.

How to Make Tomato Mascarpone Sauce
This tomato mascarpone sauce is going to quickly become a family favorite! You can use this for pasta of any kind, or even chicken parmesan.

Tomato Mascarpone Sauce Ingredients and Substitutions
Olive Oil – Using a high-quality olive oil will result in better flavor.
Yellow onion – this adds a ton of flavor and subtle sweetness to this pasta sauce.
Garlic cloves – generous amounts of garlic will provide amazing flavor and aroma.
Sea salt and pepper – sea salt over table salt and freshly cracked pepper over pre-ground.
Canned diced tomatoes – organic, good quality tomatoes make all the difference since this is a tomato-based sauce.
White wine vinegar – white wine also works well, either way you need this acid component so the sauce’s flavor doesn’t fall flat.
Dried Italian herbs – any comination of italian seasoning works.
Fresh basil leaves – fresh basil leaves provide this pasta sauce with beautiful color and freshness.
Mascarpone cheese – the star of the show – mascarpone cheese is creamy and mooth with a mild flavor that makes for the perfect creamy tomato pasta sauce.
Grated parmesan – I highly recommend freshly grated parmigiano reggiano.
Step by Step Instructions (with photos)
Add olive oil to skillet over medium heat (or brown meat and use grease from the meat) then saute onion until soft and translucent. Then add garlic, sea salt and pepper.

Deglaze the pan with white wine vinegar then stir to combine and get any chunks off bottom of skillet. Then add tomatoes, Italian spices and basil and stir to combine. Saute for 15 minutes to reduce.


Add mascarpone and parmesan cheeses.

Garnish with more fresh basil and serve over desired pasta or meat dish.

Store the tomato mascarpone sauce in an airtight container in the fridge for up to 3 days. Alternatively, you could store the sauce mixed with pasta in an airtight container in the fridge for up to 3 days.
In a Pinch Ideas
These are some ideas to shave some time off this recipe when you’re in a pinch and need to get dinner on the table quickly.

- Buy pre-minced or pre-peeled garlic.
- Saute the tomatoes on slightly higher heat to help them reduce faster. Keep close watch, though.
- Use pre-shredded parmesan cheese (not nearly as tasty!).
Tomato Mascarpone Sauce Tips

- Don’t rush the simmering time – if you have the time, try to simmer at low to medium heat for at least 15 minutes (up to 30 minutes) to really develop the flavors of the tomato sauce.
- Use quality ingredients – using quality tomatoes and parmesan, particularly, will make this dish over the top.
- Taste and modify – be sure to taste the sauce to make sure it has all the flavor you like. If it needs more of something – don’t be afraid to add it.
Tomato Mascarpone Sauce Serving Suggestions

Italian sausage pasta – this tomato mascarpone sauce is delicious with italian sausage and pasta. Simply use the grease from cooking the italian sausage to saute the sauce in.
Chicken parmesan – this sauce would be incredible as the red sauce component of chicken parmesan.
Chicken breast – liven up a simple chicken breast with tomato mascarpone sauce.
Angel hair pasta – one of my favorite pasta types!
With roasted garlic sourdough bread – use my roasted garlic sourdough bread as either a side dish, or even dip the bread in the sauce!

Tomato Mascarpone Sauce
Ingredients
- 1 tbs olive oil
- 1 yellow onion diced
- 4 cloves garlic minced
- sea salt and pepper to taste
- 2 14oz cans diced tomatoes with the juice
- 4 tbs white wine vinegar or 1/2 cup white wine
- 2 tsp dried italian herbs
- handful of fresh basil leaves
- 8 oz mascarpone cheese
- 1 cup grated parmesan
Instructions
- Add olive oil to skillet over medium heat (or brown meat and use grease from the meat) then saute onion until soft and translucent.
- Add garlic, salt, and pepper and saute for another minute.
- Deglaze the pan with white wine vinegar then stir to combine and get any chunks off bottom of skillet.
- Add tomatoes, Italian spices and basil then stir to combine.
- Saute for about 15 minutes or until the sauce has reduced and become thick keeping over medium to medium-low heat.
- Add mascarpone and parmesan cheeses and saute until melted and warmed through.
- Garnish with more fresh basil and serve over desired pasta or meat dish.
