Christmas crack is a toffee cookie typically made with Saltine crackers, however, this recipe is made using graham crackers. The toffee is spread overtop the cracker and topped with chocolate to create a layered cookie!

Ingredients
- Graham crackers – the nutty and subtle sweetness of the graham crackers work perfectly with the toffee and chocolate!
- Salted butter – the saltiness of the butter draws out the flavors of the toffee and graham crackers. It also adds that saltiness that we love from the traditional Christmas crack with Saltines.
- Brown sugar – Good quality, organic brown sugar is best.
- Pecans – these add the best crunch to these toffee bars.
- Dark or semi-sweet chocolate chips – Either work great! Be careful not to use a super sweet chip like milk chocolate since the toffee is already quite sweet.
- Toffee bits – You can get these in a bag next to the chocolate chips in the baking section of most grocery stores (usually Heath brand).
step by step instructions with pictures
- Preheat the oven to 350F and prepare a baking dish with parchment paper.
- Arrange graham crackers inside the dish (fully cover the bottom of the dish).
- In a saucepan over medium-high heat, melt butter.
- Add brown sugar and stir.
- Add pecans and stir.
- Stir frequently until boiling. Let boil for several minutes while stirring.
- Pour the toffee over the graham crackers, then bake for 7 minutes.
- Sprinkle with chocolate chips, then cover until melted.
- Once the chocolate chips have melted, spread them evenly across the toffee.
- Sprinkle with toffee bits, cool completely, then slice and enjoy!

Store the Christmas crack grahams in an air-tight container at room temperature for up to 7 days.
Refrigerator
Christmas crack can also be stored in the refrigerator – some people prefer this method because they like their toffee bars cold. Store in an air-tight container (or plastic wrap) for up to 2 weeks.
Freezer
Whether you’re freezing for later, or just because you prefer frozen treats, you can absolutely freeze Christmas crack! Just store either in an airtight container or in plastic wrap and place in the freezer for up to 3 months.

- Melt chocolate quickly: To speed up melting the chocolate, place the baking sheet (or foil) overtop the baking dish, then set in the oven (turned off but still warm from baking).
- Stir constantly: Your toffee needs to be stirred very frequently to prevent burning. Almost non-stop – if you do stop stirring, be ready to jump right back at it within a few seconds.
- Graham crackers: Some of the graham crackers will need to be broken in half or quarters to fully cover the baking dish. You want the dish fully covered so you get more bars.
- Let boil: Let the toffee boil for several minutes before pouring over the crackers. This will prevent the Christmas crack from being too sticky. You’ll know it’s good to go when it just starts to become foamy.

Christmas crack faq
Christmas crack is chewier than typical toffee, or brittle. If it’s too chewy and soft, let your toffee boil a little longer next time (while stirring constantly).
Christmas crack can be refrigerated, but it isn’t necessary. It’ll be fine left at room temperature for up to 7 days.
Christmas crack will last up to 7 days at room temperature, 2 weeks refrigerated and 3 months frozen.
Using margarine may yield a stickier result than using real butter, but it can be done. Be sure to boil the margarine and brown sugar for several minutes prior to pouring over your crackers.
Christmas crack becomes sticky when you don’t allow the toffee mixture to boil long enough prior to pouring over the crackers.

Christmas Crack with Graham Crackers
Ingredients
- 10 full graham crackers 20 halves
- 1 cup salted butter
- 1 cup brown sugar packed
- 2 cups dark chocolate or semi-sweet chocolate chips
- 1/3 cup toffee bits
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350F and line a 9×13 baking dish with parchment paper.
- Line the bottom of the dish with graham crackers (breaking in half or quarters in order to fully line the dish).
- In a saucepan add the butter and melt over medium-high heat. Once almost melted add brown sugar and stir.
- Once the sugar and butter are combined add chopped pecans and stir.
- Stir continuously until the mixture begins to boil and thicken. Let the mixture boil for several minutes until it just starts to become foamy.
- Pour the toffee over the graham crackers and use a spatula to spread evenly across all the crackers.
- Bake for 7 minutes.
- Remove the dish from the oven, then sprinkle the chocolate chips evenly on top. Place a baking sheet or a piece of foil overtop the baking dish and let sit for a few minutes until the chocolate chips melt.
- Once melted, use a spatula to evenly spread the chocolate chips across the toffee. Then sprinkle the top with toffee bits.
- Let completely cool before cutting.
